Long time food & beverage veterans, Alyson and Dan Davis (ARDR Hospitality Group – the team behind Craft Tasting Room, Lincoln Street Kitchen and The Green Room) wanted to create a new concept focusing on the celebration of authentic Mexican food in an approachable, fun, friendly and light-hearted fine casual setting. They started this concept after being inspired by frequent trips to Mexico, Chef Enrique Olvera of Pujol, and meeting farmers whose families have been cultivating traditional maize for centuries. It was there that they experienced their first truly perfect tortilla.

The name “Maíz Agua Sal” means “Corn Water Salt” which are the simple and natural ingredients used to make fresh handmade corn tortillas. Inspired by Otomi textiles and Talvera pottery, the Maíz Agua Sal brand identity captures the essence of an embroidery pattern using icons and elements that portray the heirloom corn and chef driven ingredients that the new tortilleria and agave bar offer. The brand pays homage to traditional Mexican craftsmanship while infusing it with a contemporary flair, resulting in a light, fresh, and fun ambiance that mirrors the restaurant’s lively experience and atmosphere—an embodiment of a curious and joyful way of life. The new brand comes to life through an array of mediums including the brand identity, print materials, food service packaging and environmental design for the new space.

At Maíz Agua Sal (MAS for short) you can expect scratch-made modern Mexican food, handmade tortillas, pressed fresh daily, with ingredients sourced from small family-owned Mexican farms. A curated menu of pozole, mole, carnitas and al pastor from Mexican-American Chef Jonathan Olvera’s childhood. An innovative mezcal and tequila focused cocktail program led by Amanda Britton, as well as non alcoholic house-made agua frescas and tepache.
